Hard-boiled fresh eggs are nearly impossible to peel, but if you steam them in a vegetable steamer for 15 minutes, the peel will slide right off every time!

The two links below will help you choose the right breed for your situation based on characteristics. For backyard flocks, look for qualities like "bears confinement well, quiet, calm, easy to tame, good layer, cold hardy ..." and avoid qualities like "noisy, aggressive, broody ..."  One good choice is the Barred Plymouth Rock, read why.
